The study states that in the beginning of the 20th century, the amount of calcium in beans was 65 mg, but now it has halved to 37 mg. At the same time, a decrease in the amount of iron has also been seen in broccoli. Talking about asparagus, the amount of Vitamin A in it is almost half left. At the same time, protein, zinc and iron content in rice has also reduced.
Why are fruits and vegetables losing their nutrients?
According to scientists, this is happening due to environmental change. As the amount of carbon dioxide in the atmosphere is increasing, the amount of nutrients in foods is decreasing. According to the report of the World Health Organization, at present the deficiency of Vitamin A, Iron and Zinc is the highest among the people across the world. These same nutrients are being lost the fastest in food items.
Also, according to the program head of the International Food Policy Research Institute (IFPRI), the iron and zinc content of many food items has reduced by 30% to 40% due to excessive rain, cold and other losses.
How are nutrients being added to the seeds?
To overcome the deficiency of nutrients in fruits and vegetables, many different techniques like modified crops, nutrient rich fertilizers, adding deficient minerals to the soil etc. are being used. Apart from this, the special technique is biofortification, through which scientists are adding nutrients to the seeds themselves, just like iodine is added to salt.
